My recipe this week is Light Parmesan Chicken. Here’s the thing with Parmesan Chicken….it’s usually fried, coated in butter first, and has a ton of cheese. Then, you top it with tomato sauce, some more cheese, and eat it alongside pasta. We’ll, for me, that’s a little too much indulgence for one meal.
So, I bake my Parmesan Chicken…..and add a few smaller touches to make it a bit “healthier”.
Light Parmesan Chicken
Ingredients:3/4 cup parmesan cheese1/2 cup bread crumbs1/2 teaspoon garlic salt1 teaspoon oregano, basil, or Italian Seasoning4 boneless, skinless chicken breasts2 eggs
Directions: 1. Preheat the oven to 400 degrees.2. Put the eggs in a shallow bowl and whip them with a fork until they are smooth.3. In another shallow bowl, mix the parmesan cheese, bread crumbs, garlic salt, and seasoning.4. Dip the chicken in the bread crumb mixture, in the egg, and back in the bread crumbs again.5. Place the chicken in a 9×13 baking dish. Bake at 400 degrees for 25-30 minutes.
