Mom’s Crazy Cooking Challenge {Streusel Topped Blueberry Muffins}

The Mom's Crazy Cooking Challenge was totally fun this time around!  What was the challenge?  As you can see from the title, it was blueberry muffins.  Yay!  And it came at a totally perfect time, too.  I needed to whip something up for Bible study, and I thought it would be the perfect time to make some muffins.  


Where did I go first?  Well, to my latest Must Try Monday link party, of course.  Each week, it's graced with foodies from blog land who come to link up their "must try" recipes.  

I KNEW one of my faithful bloggy linking friends wouldn't let me down.  I wasn't disappointed in Sarah @ Fantastical Sharing of Recipes!  

I love me a little streusel, and that was the selling point for this recipe.  Here it is:

Streusel Topped Blueberry Muffins {from Fantastical Sharing of Recipes}

Ingredients:
1 3/4 cup flour
2 3/4 teaspoons baking powder
3/4 teaspoon salt
1/2 cup sugar
1 egg
3/4 cup buttermilk {if you don't have this, add 1 T or so of lemon juice to the milk and let it set 5 minutes}
1/3 cup oil
1 cup blueberries
1 T flour
1T sugar

Streusel Topping:
1/4 cup sugar
2 1/2 Tablespoons flour
1/2 teaspoon cinnamon
1 1/2 Tablespoons butter

Directions:

1.  In a large mixing bowl, combine the flour, baking powder, salt, and sugar.  Mix well.
2.  In a smaller bowl, whisk together the egg, buttermilk, and oil.
3.  Add the egg mixture to the flour mixture until it's just combined.

4.  In another small bowl, toss the blueberries in the 1 Tablespoon flour and 1 Tablespoon sugar, just to give them a nice little coat.


5.  Fold the blueberries into the batter.  Line a muffin tin with baking cups and fill them almost full.
6.  Mix the streusel topping and sprinkle over the filled muffin cups.
7.  Bake for 18 minutes at 400 degrees.
