Homemade Bread Bowls
I'm starting to be more comfortable with baking yeast breads-like I have to use yeast, let it rise, and then hope for the best. To be honest, my KitchenAid Mixer is a lifesaver in this respect because I've been mixing it with the paddle attachement, then changing to the dough hook and letting it knead the dough after it's mixed. Love it.
Anyway, I tweaked the recipe for these a little bit by adding some whole wheat flour because I had more whole wheat flour than white, and I didn't want to use up all my white flour yet. Also, I was able to get 8 bread bowls out of this recipe.
Homemade Bread Bowls:
2 Cups plus 4 Tbsp. warm water
4 tsp butter, softened
6 1/2 cups flour (I used 4 c white flour and 2 1/2 c whole wheat)
2 Tbsp sugar
3 tsp salt
2 pkg yeast (or if you are using bulk 5 1/2 tsps)
*In your mixer bowl, dissolve the yeast in the warm water and add in the sugar, salt, and butter. Add in the flour, and mix until combined. Once mixed, let your Kitchenaid knead your dough for about 5 minutes. Let rise until double.
*Punch dough down. Form dough into balls, roughly the size of your fist. I was able to get 6. Place on a cookie sheet, and let rise until doubled. It took about 3 hours to rise.
*Bake in a 425° for about 20-25 minutes, or until it begins to turn brown. Let cool for a few minutes so you don’t burn your hands. Then cut the slight “bump” off the top, making it flat. (Mine didn't have a "bump" on top, but I didn't worry about it. I just carved a circle out of the top with a serated knife and pulled the top off. Then, I scooped out the insides)
*Using a spoon, scoop out the bread, to within ¼ inch of the edges. Brush the outside with an egg white wash. {I added about 1 Tbsp water to a lightly beaten egg white} Return to oven, and bake about 5 minutes longer. This will turn the outside golden and crisp, and also seal the inside to help prevent leakage.
*Fill with your favorite soup or dip and Enjoy!

I put the pieces I scooped out of the inside into a bowl and served it alongside the chili for dipping. I filled these with chili for our dinner. The next day, I took one that was leftover and filled it with canned soup, giving me an extra treat for lunch.
I had four leftover, so instead of carving out the tops when they came out of the oven, I let them cool and put them in the freezer for a future meal. I think I will be adding these to my batch cooking next time.
