Happy Tuesday all of you lovely My Favorite Finds readers!! It’s Jaime here again back with another breakfast recipe for ya!!
Our lovely friend Carrie is about to head out on a fun family vacation to the wonderful world of Disney (can I just say jealous!!!) so this month we are talking all about traveling foods! For me, my family vacation for the past two years has consisted of my sister & I making the 15+ hour drive from Texas to South Carolina with three kids in tow to visit family. When you’re having to drive that far with three kids, you honestly want to get out of the car as few times as possible because you always fear the kids are going to revolt & not get back in car seats! Plus you just want to get through that drive as quickly as possible with as few stops as possible! So we try to have as many car friendly foods as we can. Not only does it make the drive easier but it also helps us control the kids not filling up on junk at rest stops & gas stations!!

These breakfast cookies would be great for a car trip or even in as snacks on a plane (are you allowed to bring food on a plane anymore??) Just toss them in a Ziploc bag & you’ve got a healthy cookie at your finger tips for those hungry kiddos! Not heading anywhere this summer? No problem ~ these cookies are also freezer friendly so you can just stock up for breakfast!!
3 bananas, mashed
1/3 cup no sugar added applesauce
2 cups quick cook oats
1/4 cup milk
3 ounces raisins
1 teaspoon vanilla extract
1 teaspoon almond extract
1 teaspoon ground cinnamon/sugar mixture
1/2 tablespoon coconut oil
1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
2. In a large bowl, mix all ingredients until combined. Allow to sit for 5 minutes to let the oats become soaked.
3. Heap the dough by the tablespoonful onto the baking sheet about two inches apart.
4. Bake for 15 minutes.
5. Allow to cool for a minute or two on the baking sheet and then remove to a wire rack to cool completely.
Allow the cookies to cool completely. Place in a gallon Ziploc bag and freeze.
TO THAW & SERVE
Remove the desired number of cookies from the bag and allow to thaw
overnight in the refrigerator. Pop in the microwave to 15-20 seconds
(times will vary based on your microwave) and then serve.
