Velveeta Cheese….brings back memories for me! I can’t help but associate Velveeta Cheese with my grandma. Why? Because she used to cook with it all.the.time. THEN, what I thought was even cooler, she’d use the boxes for drawer organization. Like, she’d put her pencils, or extra receipts, or whatever was laying around in the boxes to store them in her kitchen drawers. Waste not, want not….I guess. Anyway, I picked up some Velveeta Cheese at WalMart, and decided that I was going to make something yummy to share with my family, just like my grandma used to. I noticed, while at Wal Mart, that there are several varieties of Velveeta now…Jalapeno, Queso Blanco, and 2% Milk. But, I decided to go with the good old Original!
Velveeta Bacon Cheese Chips
1 large russet potato
2 slices Velveeta Cheese
1. Slice your potato very thinly, and place it in a preheated deep fryer. If you prefer to bake your “potato chips”, go ahead and do so. Allow these to fry in the oil for about 15 minutes, or until crispy and golden brown.
2. While the potatoes are simmering away in the oil, cut two slices of Velveeta Cheese into cubes and place in a microwave safe dish.
3. Drain the potatoes on paper towels, and transfer to a serving dish. Sprinkle lightly with seasoned salt.
4. Microwave the Velveeta Cheese on high for 45 seconds, stirring to make it smooth. Drizzle over the potatoes and top with bacon bits.
Yum! Doesn’t the Velveeta look like liquid gold, drizzled over the potatoes?! It is so good, and this afternoon snack is so easy! Velveeta can for sure do more than just make the BEST macaroni and cheese, or be combined with salsa to make queso dip. Think of it topping nachos, or even in soups. Yum!
